ABSTRACT- The dairy industry is one example of a factory characterised by the association of different production systems with their own identity. These systems: Agriculture, livestock, dairy farming, dairy packing and products distribution, however, are to be closely related, since the final product quality is highly dependent on their appropriate connection. This industrial activity includes different production sectors like milk, cheese, butter or yogurt. All of them are essential for our everyday nutritional regime. In this work, milk production has been chosen as the most representative of them. This industry has been extensively studied from a Life Cycle Assessment (LCA) in many European countries, nevertheless, concerning LCA in Spain, little work has been reported, and a global and reliable inventory is still lacking. Therefore, and taking into account that this sector is responsible of the main production systems in Galicia, the geographic and custom characteristics of the zone have been considered to carry out a complete inventory of different sized installations: two farms and two packing plants. On one hand, in order to compare the dependence on the dimension of the farm, two different sized ones from the Galician rural zone have been analysed and on the other, to determine the influence of milk processing capacity, two dairy packing have been assessed.
Key words: life cycle inventory, dairies, farm, milk
